Closing MoFo

If you just pay attention to the name, you might thing VeganMoFo is all about the food. And, to an extent, it is. But really, when over 500 people get together (whether it's online or in real life) with a common goal, I think it's even more about community. So what better way is there to wrap up VeganMoFo than with a potluck?

Tuesday night, a small group of people from the PPK converged on Melissa Bastian's home to share in all things tasty and vegan. Stories were told, beer was drank and cats were admired. It was a lovely time.

Melissa made stuffed shells. These were first stuffed shells I've had since going vegan and they made me so happy. I really love tofu ricotta, her sauce was very nice and she didn't overcook the shells (which makes me cry).

Quarantined brought a chickpea tahini casserole that totally rocked. Chickpeas are pretty much my best friend, so I was such a happy camper.

I brought the roasted calabaza pumpkin quinotto I mentioned yesterday. It reheated very well and the spices mellowed out overnight, so I was actually able to eat it. Another win for Terry.

The stuffed peppers pictured were by Alf-redo. I am generally not a fan of cooked peppers, so I don't think I've had a stuffed pepper since I was little and my parents chose my food. I was a little dubious about these, but the fillings looked so good I had to give them a shot. I am SO glad I did. They fillings were great and I even liked the pepper part. A real victory.

Sashi brought mac 'n' cheese from a recipe I've been meaning to try but haven't gotten around to yet. I had hoped tasting hers would be enough to satisfy my curiosity so I wouldn't have to do it myself, but instead, it just made me crave more!

Not pictured are the olives and marinated almonds Joe brought, and the desserts (HOW did I forget to take a picture of the desserts?! Thankfully, Melissa has them (and loads of other pictures) over at her blog). Melissa made lovely Creamiscle cupcakes that were nice and citrusy and didn't overwhelm with the frosting. I think I ate about a dozen of Alf-redo's pepita cranberry pistachio oatmeal cookies. They were so tasty and perfectly chewy, so I just kept telling myself nuts and seeds are good for me, as I shoved them in my face. Protein! Omega 3s! Right?

I think it's safe to say this was a successful potluck and a wonderful end to VeganMoFo. Few things are better than spending time with amazing people over great food.

Protein and omega 3's, totally. And the cupcakes had... almond milk in them which provide... my daily RDA of deliciousness? Which is why I can continue to eat two per day and then bake some more? Yeah, that's totally it.

It's funny, I've already written my post for tomorrow, and it's all about the joys of community and the sharing of food. We seem to be of one mind on this one. :)

That is a tasty lookin' plate of food! The desserts sound fab too.
