Get up with the get down
Or the Takedown. Whatever.
Last Sunday, May 10, was the first ever Tofu Takedown! Presented by Matt Timms, of Chili Takedown fame, at the Highline Ballroom, the Tofu Takedown was a chance for people to compete to the death for the honor of the cherished soy product.
Or something.

I entered the competition with vegan cannoli, not so much because I wanted to compete, but because I wanted to participate. I'd never done anything like this before, so I knew winning wasn't an option. However, feeding a couple hundred people cannoli was. Despite the preparation difficulties (which everyone has come to expect when I'm in the kitchen), I'm really glad I did this and would definitely do it again. The next event is a Curry Takedown, which I'm not really feeling, but I've already got some ideas for then next tofu one.

I'm not posting my recipe because I really just mixed and matched aspects of recipes I found online and I don't think a recipe that includes lines like "Add sugar until contents of bowl no longer smells like tofu" is all that helpful. However, I will give you a basic outline of how to make cannoli (I wanted to take pictures of the various steps, but got too lazy. Shocking, yes?):
Make some dough. It usually has egg in it, but I used ground flax in water instead.
Roll the dough out, cut it into circles, wrap the circles around cannoli forms (by the way, anyone need THIRTY-EIGHT CANNOLI TUBES?!? What the hell am I going to do with THIRTY-EIGHT CANNOLI TUBES!?!) and fry it in a pan of 360 degree oil for two or three minutes.
Make your filling. It's usually mostly drained ricotta cheese, but I used really well pressed firm tofu, some lemon juice, granulated and confectioners sugar, vanilla extract, and some mini bittersweet chocolate chips, of course.
Pipe your filling into your shells and viola! Cannoli! Simple, right? It might be a little less simple when you think you need to make 200 of them. It gets even less simple when you show up and the organizer says you actually need 300 of them. It gets even less simple when instead of coming out like this:

about half of your shells come out like this (and I still have no idea why):

That made dealing with runny filling a cinch by comparison. I just drained it overnight in my handy dandy cannoli filling draining apparatus (not pictured: two pieces of pizza used to apply pressure and wedge the bowl tightly in the fridge):

It took four tries on the shells and two tries on the filling to get them right. Thankfully, even when they were wrong, they were tasty. My family is still snacking on fried dough.

The event itself was very fun. So many people showed up that I would have run out of cannoli really early on if my friend hadn't been there. She washed off her pocketknife and cut as many as she could in half. We still ran out before everyone got to try them, but two other people ran out first, so that's not so bad.
There were seventeen entrants: four savory dishes and thirteen sweet. Maybe about half were vegan, though one of the dishes (a winner) was called vegan despite including honey. Whatever I tasted was quite nice. I think I would have given the prize to the vegan cheesecake, but mostly savory dishes won. This may or may not be because they were so scarce and people just got tired of looking at desserts.
Since things covered in powdered sugar are pretty, here's another shot of the cannoli. Please ignore the awkward-looking human with the tongs. That's just me.

The Brunchening 2.0
I know I said my next post would be about cake, but I don't have pictures yet, so you get brunch instead. Sorry!
I celebrated Labor Day with a brunch picnic in Prospect Park. Almost all recipes came from Isa Chandra Moskowitz's upcoming brunch book Crack of Noon. I cannot express how much love I have for most of the recipes that will be in this book. The sausages, waffles, scones and scrambles are some of the best food I've ever eaten.

I don't know how I managed to eat almost nothing but brunch for three months without a waffle maker. I didn't realize I had that much restraint, but my period of deprivation is over. To celebrate, I made Cornbread Waffles With Pantry Mole Rojo And Seitan and Buckwheat Waffles With Red Wine Tarragon Mushroom Gravy.
Cornbread Waffle with Pantry Mole Rojo and Seitan:

The cornbread waffle is great. It's almost like a waffle-shaped corn muffin. I love corn muffins so much. The seitan is so simple, but incredibly tasty. I made the Simple Seitan recipe from Veganomicon, and sauteed it with some red onion and yellow pepper. Easy and delicious. I actually ate most of it without the mole or the waffles and think it'd be great over rice. This was my first mole and I found it really interesting. I don't think I've ever made anything with such a wide variety of ingredients before. Chocolate, chili, raisins, peanut butter, tortilla chips and other things all came together to make a really nice sauce. It was so nice some of my friends at it alone and one did a little dance with her waffle:

Buckwheat Waffles with Red Wine Tarragon Mushroom Gravy:

That waffle looks a little odd because it was the last one, made with the leftover batter. It was the only one to get eaten at the picnic because we were full and it was small. The buckwheat waffles are good, and feel kind of healthy, which is nice. The gravy is rich and awesome. I'd love to put it over mashed potatoes (actually, that may be dinner tonight) or seitan steaks. I'm definitely going to make it again in the winter.
Wallowing in Waffles:

Of everything I've made for brunch so far, I think I've had the most fun with sausage (get your minds out of the gutters, people). The recipes are so easy: make dough, wrap it up like a Tootsie Roll in some foil and steam it. In less than an hour, you have tasty sausages. This time, I made Cherry Sage Sausages. Dried cherries in sausages never would have occurred to me, but I'm glad it occurred to Isa because they freaking rule.

You know what else is kind of awesome? Tofu Benny. Seriously. Have you ever had homemade vegan hollandaise while sitting on the ground in Brooklyn? I have. It'll be something to tell the grandkids. Someone else's grandkids.

Yup. That there is marinated tofu over a slice of tomato with smoked salt, on a bed of Diner Home Fries from Veganomicon, smothered in hollandaise. It tastes even better than it looks and sounds, I swear. And the cute little circles sit so nicely on top of the tomato slices (the tomato in the picture is hiding; you can almost see it on the right). It's one of those fairly easy but impressive looking dishes I love so much (it looks way more impressive when it doesn't spend an hour on the train, honest).
Does Scrambled Tortillas sound odd to you? It sounded odd to me, but I soldiered on and I'm glad I did because this is easy comfort food. It's sort of like Mexican Matzo Brei. The flavor took a few bites to grow on me, but I totally dig it now. I swear it tastes better than it looks.

Scones are required eating for brunch, right? How about Berry Lavender Scones? Those should be required eating for all the time. The recipe calls for marionberries, but I've never even seen one of those, so I made mine with a mix of raspberries and blackberries. I can't say anyone complained! These were my first scones ever and they came out quite well. Sadly, they got squished under the rest of the food on the way over (but they tasted fine, just the same):

We also had Polenta Rancheros with Cashew Sour Cream. I love polenta. I'd put it on anything. This is a nice, beany way to have it. I've eaten it for lunch every day this week and am not sick of it yet (which is sad because I just ate the last portion). I have to say the Cashew Sour Cream doesn't really taste like sour cream, though. Instead, it tastes good. I've always hated sour cream, but I'm throwing this cashew stuff on pretty much everything. Both are really easy, make a lot and reheat well, so this is a definite not-miss recipe.
All that was great, but a meal is nothing without dessert. Lucky for me, Lauren (pictured above with waffle) brought the Veganomicon Strawberry-Plum Crisp. Even after all that food, I had two large helpings. She managed to keep it warm the whole time and it was one of the best desserts I've ever had. I will definitely have to make it myself soon. Like weekly.
Despite that, when getting together with a group, I can never resist the urge to bake something (and the scones just weren't enough), so I made donuts. Yes, donuts. I got the recipe from VeganYumYum, the mini donut pan from Amazon and had a grand time.
The chocolate ones came out very similar to the ones from Entenmann's, just a bit more bitter because I used semi-sweet chocolate. I think I may try these again using rice milk chocolate.

And with sprinkles. Like Homer Simpson, but more awesome:

Bittersweet
Last Sunday was bittersweet. My friends and I got together, which is always fun. It was a happy time because it was a birthday. It was a sad time because the birthday girl is moving home (Barbados) next week and will be missed.
For dinner, I brought the Fresh Mango Summer Rolls from Vegan With a Vengeance. For dessert, I brought a big fruit tart. She loves them, but they can make her sick because she's lactose intolerant, so she asked me to veganize them. I did:

First, I made Betty Crocker's Baked Pie Crust and sealed it with an apricot preserves glaze. I filled that with the pastry creme filling of the Brooklyn vs. Boston Cream Pie Cupcakes in Vegan Cupcakes Take Over the World (yes, the stuff with the amazing, non-dissolving agar flakes. This time, I doubled the recipe and got the flakes dissolved in about an hour. That's comparatively no time) and topped that with kiwi, raspberries, blackberries, blueberries, strawberries and more glaze. Viola!
I was lazy about skinning the kiwi, so I just cut the sides off, not realizing it would leave me with rectangular kiwi slices. I felt really stupid, but put them on the tart anyway. My brother thought it was an intentional design and he liked it, so I played along.
No one brought candles, so here's everyone getting ready for the birthday girl to blow out the matches on her cake (store bought, non-vegan, red velvet) and tart:

The Fresh Mango Summer Rolls are very nice, but the Thai Peanut Sauce is really what makes them pop. I had to omit the cilantro, which undoubtedly left them a little less flavorful (and colorful) than they should have been, but they were still very nice. And I want to put the accompanying sauce (which is incredibly fast and easy to make) on everything.

Things Fall Apart
The centre cannot hold.
Especially when said centre is made of crepes and pastry cream. Behold! The crepe cake!

Doesn't that look lovely(ish)? It's rather a pity that that's not how it looked when it got to the table. This is:

Back in January, my friend challenged me to veganize this cake. It looked complicated, so I decided to wait a while, until I was a bit more comfortable in the kitchen. A while turned into months and then her birthday was coming, so I decided to figure it out and make it her birthday cake. I really wanted to get it right, so I started working on it over a month in advance because the filling kind of freaked me out. This wasn't merely a case of substituting margarine for butter and a little bit of soy yogurt for an egg and I didn't know what to do, so I took it to The PPK. As always, they were very helpful and directed me toward the pastry cream filling of the Brooklyn vs. Boston Cream Pie Cupcakes in Vegan Cupcakes Take Over the World. I decided layering that with a few batches of the sweet crepes from Veganomicon would do the trick and set to work.
Here's my first attempt:


Failure. The crepes were too thick and not browned enough and the pastry cream was too loose. The reason? I couldn't get my agar flakes to dissolve. I officially hate agar flakes.
A few days later, I tried again:

Per the suggestions of the lovely people on The PPK, I reduced the crepe batter from 1/2 cup to 1/3 per crepe and dissolved the agar flakes in the microwave (which still took HOURS). The crepes still weren't brown enough, but it was only a test, so I was going for speed (as you can see by my ever-so-smooth filling job). It looked good enough to me. The cream was thick and the crepes were thin, so the cream was able to support the crepes, instead of the other way around. With eight crepes, I called it success. But the recipe called for 25 crepes and it never occurred to me that the number would cause a problem.
Though it looked good, I found the taste slightly lacking. It tasted good and it was nice and sweet, but it didn't taste like anything. Just sweet. I wanted to layer in some thinly sliced strawberries, but I thought that would be too much of a variation (read: cheat) from the original recipe, so I decided to substitute chocolate extract for vanilla in the final cake, top it with powdered sugar and write on it in melted chocolate (at first, I wasn't going to write on it at all, then I was thinking of using royal icing or something similarly generic).
The birthday dinner was on Wednesday, so I planned my week accordingly. Monday night, I went home early and made the crepe batter (four times the written recipe) and the pastry cream (six times the written recipe). I knew I'd have the agar issue, so I did that first, working on the batter while the agar sat in the warm/hot soy milk slowly dissolving, then whisking it for five minutes at a time. For hours. My right arm is currently on strike.

Tuesday night, I went to see The Futureheads do their first US show in two years (which was superawesome. Expect a fall tour. Run, don't walk for tickets!), then went home and made the crepes and put it all together.
Thirty crepes:

I only needed 25, so I put aside the uglier crepes and the best one (for the top) on a cutting board as I worked. I got to 18, paused to wash my hands, looked over at the cake and it looked like a landslide. As I stood there, the crepes were sliding off of the cake, onto the table, then almost onto the floor! I ran over and caught them (part of them were already hanging off the table), then grabbed up the whole cake and dropped it down on the cutting board. Right on top of the nicest crepe. Crap.
Once I got the pastry cream of of myself (and the table) and convinced myself I was neither going to cry nor throw the crepes around the room, I started reassembling the cake crepe by crepe, using my hands to smooth the filling, instead of my spatula. Since half the filling ended up on the table, cutting board and me, I thought the cake might hold together better with the thinner layers of filling. Since it was already covered with pastry cream, I included the "best crepe" in the cake and topped it off with a clean one, so the cake ended up being twenty crepes instead of 25. That was good enough for me, so I dusted it with powdered sugar and wrote on it with the melted chocolate.

I IMed the birthday girl when I got to work and basically apologized for completely ruining her birthday (because that's how it felt to me) and tried to brainstorm how to fix it. A coworker noticed I was upset and when I showed her why, she laughed at me. When she was done laughing, she suggested I just move the top of the cake to the center of the pile and trim it around, so that's what I did.

Obviously, it's not nearly as attractive as it started out, but it was presentable enough. And everyone seemed to enjoy it. Even the wait staff at the restaurant tried some, but they didn't tell me what they thought of it, so maybe that was their polite way of not telling me they hated it.

I decided layering that with a few batches of the sweet crepes from Veganomicon would do the trick and set to work.
Here's my first attempt:


Failure. The crepes were too thick and not browned enough and the pastry cream was too loose. The reason? I couldn't get my agar flakes to dissolve. I officially hate agar flakes.
A few days later, I tried again:

Per the suggestions of the lovely people on The PPK, I reduced the crepe batter from 1/2 cup to 1/3 per crepe and dissolved the agar flakes in the microwave (which still took HOURS). The crepes still weren't brown enough, but it was only a test, so I was going for speed (as you can see by my ever-so-smooth filling job). It looked good enough to me. The cream was thick and the crepes were thin, so the cream was able to support the crepes, instead of the other way around. With eight crepes, I called it success. But the recipe called for 25 crepes and it never occurred to me that the number would cause a problem.
Though it looked good, I found the taste slightly lacking. It tasted good and it was nice and sweet, but it didn't taste like anything. Just sweet. I wanted to layer in some thinly sliced strawberries, but I thought that would be too much of a variation (read: cheat) from the original recipe, so I decided to substitute chocolate extract for vanilla in the final cake, top it with powdered sugar and write on it in melted chocolate (at first, I wasn't going to write on it at all, then I was thinking of using royal icing or something similarly generic).
The birthday dinner was on Wednesday, so I planned my week accordingly. Monday night, I went home early and made the crepe batter (four times the written recipe) and the pastry cream (six times the written recipe). I knew I'd have the agar issue, so I did that first, working on the batter while the agar sat in the warm/hot soy milk slowly dissolving, then whisking it for five minutes at a time. For hours. My right arm is currently on strike.

Tuesday night, I went to see The Futureheads do their first US show in two years (which was superawesome. Expect a fall tour. Run, don't walk for tickets!), then went home and made the crepes and put it all together.
Thirty crepes:

I only needed 25, so I put aside the uglier crepes and the best one (for the top) on a cutting board as I worked. I got to 18, paused to wash my hands, looked over at the cake and it looked like a landslide. As I stood there, the crepes were sliding off of the cake, onto the table, then almost onto the floor! I ran over and caught them (part of them were already hanging off the table), then grabbed up the whole cake and dropped it down on the cutting board. Right on top of the nicest crepe. Crap.
Once I got the pastry cream of of myself (and the table) and convinced myself I was neither going to cry nor throw the crepes around the room, I started reassembling the cake crepe by crepe, using my hands to smooth the filling, instead of my spatula. Since half the filling ended up on the table, cutting board and me, I thought the cake might hold together better with the thinner layers of filling. Since it was already covered with pastry cream, I included the "best crepe" in the cake and topped it off with a clean one, so the cake ended up being twenty crepes instead of 25. That was good enough for me, so I dusted it with powdered sugar and wrote on it with the melted chocolate.

I IMed the birthday girl when I got to work and basically apologized for completely ruining her birthday (because that's how it felt to me) and tried to brainstorm how to fix it. A coworker noticed I was upset and when I showed her why, she laughed at me. When she was done laughing, she suggested I just move the top of the cake to the center of the pile and trim it around, so that's what I did.

Obviously, it's not nearly as attractive as it started out, but it was presentable enough. And everyone seemed to enjoy it. Even the wait staff at the restaurant tried some, but they didn't tell me what they thought of it, so maybe that was their polite way of not telling me they hated it.

Catching Up
Last week, I did a whole mess of cooking for the holiday of Shavuot (Jewish people celebrate being given the bible. It's customary not to eat meat because supposedly meat wasn't eaten until after we received the rules for kosherness in said bible). I was also commissioned to make my boss' birthday cake. I don't have any pictures of the holiday food, but here's the cake (frankly the best part anyway):

I tried to convince my family to go vegan for the holiday (it's only fifty hours), but it didn't work so well. One of the few things my mother actually cooks is a cheese dish that she only makes this time of year and she insisted on making it. Also, someone gave her a baked ziti, so she wanted to serve that. However, it turned out to be crap, so they stuck with her dish. I made the rest of the food for the holiday and it was all vegan.
Blintzes are traditional, so I made the Veganomicon crepes and made some of them into Potato-Mushroom Blintzes. My brother hates mushrooms, so I halved them and made plain potato blintzes as well. I also stuffed some with the Tofu Ricotta, also from Veganomicon. I made the Cherry Compote from Yellow Rose Recipes for dipping.
I love the Veganomicon crepes. I'd been nervous about making crepes because everyone always talks about how delicate and easy to ruin they are, but I had been practicing making them for something else and these are really easy. At first, I was annoyed that the batter had to be refrigerated for an hour before using it, but now I love that I can make the batter the night before I want to make the crepes and just get right down to the cooking when I'm eager to get down to the eating. I don't even have a crepe pan. I use a regular little non-stick pan and it works quite well.
The potato-mushroom filling is amazing. Everyone (except my brother) loved the blintzes. And he said his plain potato ones were some of the best he'd ever had. The filling couldn't be more simple, but it's one of those things that come out tasting very restauranty and people are impressed.
The Tofu Ricotta has the ricotta texture, but definitely not the taste. Everyone liked them, with the "This tastes nothing like cheese" caveat. To me, they taste strongly of nutritional yeast, so I was surprised my family liked them as much as they did (they liked them enough to honestly say they're enjoyable - they don't spare my feelings - but not enough to take seconds).
Making the blintzes themselves takes a bit of practice. I couldn't get a nice shape going, even at the end (I made about fifteen), but only one lost structural integrity and fell apart, so that's not too bad.
The Cherry Compote is very nice. My father has been putting it on everything. It's a bit more sour than I expected it to be, so I probably just used too much lemon juice. It went quite well with the cheese blintzes. I think I'll make it again next time I have a container of vegan ice cream in the house.
My mother requested something with eggplant in it, so I made the Eggplant-Potato Moussaka with Pine Nut Cream, also from Veganomicon. Dudes, that pine nut cream is so rich and awesome and...creamy. I'm always amazed by the ability of nuts to act like dairy. It's so weird. This cream is double great because it doesn't require overnight soaking or anything like some of the other nut "dairy" recipes I've seen. If you don't like eggplant and zucchini and whatnot, just make the cream and put it on...everything. I also got many compliments on the sauce. The shallots make it stand out a bit from jarred stuff. And, of course, there's nothing to not like about eggplant, zucchini and potatoes, so this recipe is a total winner.
I also made Potato Spinach Wedges, a test recipe for Isa Chandra Moskowitz's upcoming brunch book. Isa describes them as knishes without the dough, and that's basically what they are. They're tasty and easy. It's great that you can just throw it in a baking dish and be done, instead of making little, individualized items.
Dessert is the most important part of any holiday and I didn't pull any punches. I made Pain Au Chocolat (another brunch tester), Chocolate Almond Cheezecake with Graham Cracker Crust from The Ultimate Uncheese Cookbook and Strawberry-Rhubarb-Peach Pie from Vegan With a Vengeance.
Everyone went nuts for the Pain Au Chocolat. I stuffed them with raspberries, strawberries and blackberries and served them warm. The chocolate oozed all over everyone's faces and made a wonderful mess. This dessert is wonderful and best eaten 1. warm and 2. with other people. Make them with a few different kinds of fruit, share them around and laugh at the chocolate on each other's faces.
The Chocolate Almond Cheezecake was sort of like a really firm chocolate pudding pie. A really good, a really firm chocolate pudding pie. Serving it with cherries somehow enhanced the almond flavor. It would probably go nicely with a vegan whipped cream, but I haven't mastered one of those yet.
The Strawberry-Rhubarb-Peach Pie was amazing. It really hit the spot, serving it on the first hot days of the season. This was my first time having rhubarb and it really heightened all the other flavors. I love this pie. There have been requests to make it again and I will not hesitate to fill them.
Some of you may remember my birthday cake from last month. If you don't, that's OK because my boss and office manager did. It was Blackout the Forest Cake: a cross between blackout cake and black forest cake. To make it, I adapted parts of Raspberry Blackout Cake with Ganache-y Frosting and Chocolate Chip-Raspberry Blondie Bars from Vegan With a Vengeance. They requested I make the exact same cake for the office celebration of my boss' birthday. Taking advantage of any opportunity to feed people yummy vegan food, I complied. The only change was to the decoration: I halved the cherries and removed the pits so people didn't have to spit while enjoying the cake. I liked how the stems looked like candles on my cake, but I think it was worth sacrificing that for the convenience of a spit-free party. Unfortunately, I made it and carried it to work when the temperature was over eighty degrees. Ganache doesn't like to behave at temperatures like that, so it looked a little funny, but everyone agreed the taste more than made up for it.

Mini Cranberry Apple Crumb Pie
I'm skipping ahead to my submission for The Mini Pie Revolution because the deadline is nearly upon us.
For this, I borrowed my mother's "Cranapple Crunch" recipe and adapted it until it was pretty much unrecognizable. I made a dozen pies and when my mother told me she'd eaten three in one day, I knew it was time to get them out of the house and distribute them among my friends and coworkers.

When I made this, I prepared WAY too much filling, a bit too much topping and not enough crust, so I adjusted the measurements but haven't gotten to re-test it. If you decide to follow this recipe, expect it to be tasty but messy. Or just use your judgement and change things accordingly, since if you're reading this, you're probably a food blogger too and have far more experience than I (this is my first original recipe).
Mini Cranberry Apple Crumb Pies
1/2 cup water
1/2 cup sugar
1/2 bag fresh cranberries
2 cups flour (divided)
2 tsp cinnamon (divided)
1 cup margarine (divided)*
4 Tablespoons
3 apples (my mother uses Granny Smiths, I used organic Braeburns. Both tasted quite nice)
1 cup quick oats
2/3 cup brown sugar
1. Pre-heat oven to 350 and grease your muffin pan.
2. Bring water and sugar to boil in medium, non-porous saucepan. Add cranberries and return to boil. Reduce heat and boil gently for 10 minutes, stirring occasionally. Refrigerate until cool. If you do not have a non-porous saucepan, you definitely want to transfer the cranberries to a bowl before refrigerating. As the berries cool, a film will form over the top. Stir occasionally to break up the film and allow the heat to escape or your berries will never cool.
3. Mix 1 1/3 cup flour, and 1 tsp cinnamon in medium bowl. Cut in 5.5 tablespoons margarine, using pastry blender, 2 knives or your fingers, until particles are size of small peas. Sprinkle with cold water, 1/2 tablespoon at a time, tossing with fork until all flour is moistened and pastry almost leaves side of bowl.
5. Gather pastry into a ball. Shape into flattened round on lightly floured surface. Wrap flattened round of pastry in plastic wrap and refrigerate about 45 minutes or until dough is firm and cold, yet pliable.
6. While waiting for your cranberries and crust dough to cool, wash, peel and chop your apples.
7. Melt remaining margarine. To it, add 2/3 cup brown sugar, 1 cup quick oats, 2/3 cup flour and 1 tsp cinnamon. Mix well with fork, until crumbs form.
8. When your dough is ready, roll it into an log and cut it into 12 even pieces. Roll those pieces into balls and flatten them into thin rounds that will fit your muffin tins. Since they're so small, a rolling pin isn't really necessary but you're welcome to use one if you're really particular. Press each crust into a greased cup of the muffin tin and prick it a few times with a fork.
9. Mix your cranberries with your chopped apples. Fill each crust about 2/3 full with the fruit filling.
10. Finish each pie off with crumb topping.
11. Bake for 20-25 minutes, or until crumbs brown slightly.
12. Allow pies to cool before attempting to remove them from their tins.
This is why I specified the use of non-porous pots and bowls:

I still can't believe it didn't fall apart as soon as it was removed from the pan:

The crumb didn't hold up to cutting too well. This pie is meant to be eaten with the hands:

I don't know what this is or where it came from but I found it in the silverware drawer and it's a perfect Mini Pie Popper Outer. If you're going to make a habit of mini pie making, invest in one:

* I tried to cut back on the amount of margarine used, so I didn't get much of a crumb going. For a bigger, crumbier, crumb, add a couple of extra tablespoons of margarine to the crust dough.

Crabby Apple Puffs
This is another recipe of my own invention, made by messing with existing recipes that already worked for me (which doesn't actually require any skill or creativity and makes "recipe of my own invention" savage hyperbole, but it makes me feel like the White Knight in Through the Looking-Glass and What Alice Found There).
I call them Crabby Apple Puffs because I soaked the apples in lemon juice, making them quite sour, before pastrisizing them (yes, I do make up my own words often, thankyouverymuch). A lot of the lemon juice baked off, leaving some of them tasting like plain old apple puffs, but a few retained their lemony goodness and they were nice and sour.

When I accidentally used puff pastry instead of phyllo dough for my Halloween cupcakes, I also accidentally cut up far more than I needed. I thawed the extra strips out on Sunday and soaked them in a mixture of melted margarine and brown sugar, like the original cupcake recipe instructed.
The night before, I sliced up four Granny Smith apples and soaked them in about one half cup lemon juice with two teaspoons cinnamon mixed in, inspired by the raw apple pie I made a while ago.
The apples soaked overnight and the dough soaked long enough for me to finish with my zucchini and tomatoes. Then I took the apples, wrapped them in the dough, brushed the pastries with some of the leftover marinade from the apples and popped them in the oven at 350 degrees until they seemed done. The end!
Done was when I tried to put a fork in one of the pastries and everything went mush. I couldn't tell when the pastry had browned because it was covered with cinnamon. And it never got really crisp because of the margarine (which I'd totally skip next time). But the apples were really soft, so they had to get out of the oven.
I cooled them on a rack covered in paper towel to absorb most of the grease from the margarine and they got firmer and crisper as they cooled.
My family, several of my friends and I all ate them up the day they were baked. My mother, brother and I liked them a lot (we all love sour things) and no one threw up from them or anything, so I guess that's victory, right?
Unfortunately, I didn't pay close enough attention to the amounts I used of things or how long I kept them in the oven to write up a formal recipe, but there are loads of apple pastry recipes out there (e.g.: The Heart-Shaped Apple Galettes in Veganomicon), so I'm sure it's no great loss. I will, however, try to be more diligent while playing with my food in the future.

The apples soaked overnight and the dough soaked long enough for me to finish with my zucchini and tomatoes. Then I took the apples, wrapped them in the dough, brushed the pastries with some of the leftover marinade from the apples and popped them in the oven at 350 degrees until they seemed done. The end!
Done was when I tried to put a fork in one of the pastries and everything went mush. I couldn't tell when the pastry had browned because it was covered with cinnamon. And it never got really crisp because of the margarine (which I'd totally skip next time). But the apples were really soft, so they had to get out of the oven.
I cooled them on a rack covered in paper towel to absorb most of the grease from the margarine and they got firmer and crisper as they cooled.
My family, several of my friends and I all ate them up the day they were baked. My mother, brother and I liked them a lot (we all love sour things) and no one threw up from them or anything, so I guess that's victory, right?
Unfortunately, I didn't pay close enough attention to the amounts I used of things or how long I kept them in the oven to write up a formal recipe, but there are loads of apple pastry recipes out there (e.g.: The Heart-Shaped Apple Galettes in Veganomicon), so I'm sure it's no great loss. I will, however, try to be more diligent while playing with my food in the future.
