Looking Forward to Leftovers

One thing the veg-friendly of NYC look forward to this time of year is the Thanksgiving Leftovers Sandwich from 'SNice (which now has two locations). This year, I was inspired to make my own.


I started with the Bajan Salt Bread from Vegan in the Sun, then covered one side with ginger mashed sweet potatoes and apples and the other with  caulipots (both from Isa Chandra Moskowitz's upcoming whole foods book)

The next layers were the Cranberry Relish from Vegan With a Vengeance, and Isa's Silky Chickpea Gravy.

I then piled on my friend Shar's green beans with caramelized onions and almonds

and the last bit of our Veganomicon Chickpea Cutlet/Paula Dines stuffing roulade, unrolled for ease of sandwiching.

And that was that. I even packed myself a bit of Cranapple Crumble for dessert.

Another of 'SNice's seasonal favorites that we all look forward to is the "Potpie Wrap (with crust inside!)", so I cleverly secreted away a piece of our Thanksgiving potpie and stuck it in the freezer for later use (I suspect "later use" will be airplane food, since I'm going to Barbados this week).

Everyone in my house is still eating leftovers in a variety of ways and none of us are sick of them yet. Hooray for food!

Erin, it was such a great addition. And the almonds added a really nice crunch to it.
